One of the most important features of our Simple30 wellness challenge is just that - that it is simple! That means we focus on easy and delicious meals that make you feel great, support your health, and don’t take hours and special skills to prepare. (Bonus: they don’t break the bank, and many can be made with ingredients you probably already have!)

Black Bean Ragout w/ Toast
Ingredients (1-2 servings -- all at once would be a hearty meal):
1 can of black beans
1 shallot
Olive oil
A small bunch of kale (or your favorite greens)
1 tablespoon of tomato paste (optional, but makes for a richer flavor)
Red pepper flakes to taste
Salt & pepper to taste
Cumin to taste
2 tablespoons of full-fat Greek yogurt
Juice from half a lime (optional)
1-2 slices of Ezekiel bread (or your favorite sourdough)
Grass-fed butter
Method:
Chop the shallot and add to a saucepan on medium heat with a bit of olive oil (a small glug, if you will)
Add a sprinkling of salt and pepper and cook for a few minutes until softened
Add the tomato paste, if using and stir into the shallot
Add a splash water or vinegar to deglaze, scooping up any stuck shallots
Add kale and cook for 2-3 minutes, until slightly wilted
Drain the black beans except for about a tablespoon of the packing liquid, and add all to to the pot
Stir all ingredients together, and add salt/pepper/cumin/red pepper flakes to taste
Continue cooking, stirring occasionally, until fully warmed through
Toast the Ezekiel bread, and spread with grass-fed butter or drizzle with olive oil
Scoop some beans into a bowl, squeeze the lime over the beans, and add the Greek yogurt on top
Sprinkle a bit of salt and pepper onto the Greek yogurt
Enjoy with your toast!
Feel free to pair it with garlic-rubbed toasted sourdough or brown or white rice. Enjoy your meal and your evening with a belly full of protein, healthy fats, fiber, and nutrients!
