With all the hustle and bustle of everyday life, it can be challenging to feed yourself healthy, wholesome meals even once a day, let alone for all three meals.
One of the trickiest to fit in? Breakfast. And guess what – they don’t call the most important meal of the day for nothing!
A good breakfast, complete with important macro and micro nutrients like protein, fiber, and healthy fats is going to fill you up and provide lasting energy for you to accomplish whatever tasks your day has in store. Having an easy and healthy breakfast prepared and ready to go that doesn’t take more time out of your day is the key to getting this habit locked in.
Try Addie’s favorite - Chocolate & Tahini Baked Oatmeal (and yes, it’s Simple30-friendly) below!
(Credit & thanks to @sepps on IG for the original recipe inspiration!)
Ingredients:
2 bananas (ripe is better!)
300 grams of plain oats
1 teaspoon of instant coffee (optional)
3 tablespoons cacao powder
1.5 teaspoons baking powder
2 scoops of protein powder (I love Orgain chocolate in this recipe)
2 tablespoons of tahini
500 mL of plant-based milk
A pinch of salt
Method:
Mash bananas, then mix all ingredients together and layer into a baking pan sprayed lightly with cooking spray (it can be thicker or thinner depending on the size, I like 8” by 8” square or a 9” round). Just keep an eye on the texture if it’s in a thinner pan! Bake at 350 F for 25-30 minutes, test that a toothpick comes out clean.
You’re looking at 6 servings with 20g of protein each! Feel free to top with additional banana slices, Greek yogurt, a drizzle of tahini or maple syrup. I like to keep it in the fridge and gently warm it in the microwave before enjoying.
Let us know if you try it!
