Your next (Simple30-friendly) dinner!

We kicked off our Simple30 health & wellness challenge, and had an amazing potluck full of delicious, nutritious eats to get our participants excited.
We’re one week in, and we’re already inspired by folks doing extra exercises between classes, contributing to their teams with enthusiasm and encouragement, and of course - swapping recipes!
For weeknight dinners, there is nothing easier than a simple sheet pan bowl.

Sheet Pan Dinners - Sweet Potato, Kale, & Mustard Vinaigrette
Ingredients (3-4 servings):
3 small/medium, or 2 large sweet potatoes
Half a bag of kale
Large head of cauliflower or broccoli (or grab a bag from TJ’s)
Couple tablespoons of olive oil
Salt, pepper, or seasonings of choice
Protein of choice - roasted chicken, steak, can of chickpeas, lentils, or sliced & marinated tofu
For vinaigrette:
1 tablespoon of dijon mustard
½ teaspoon of honey
1 teaspoon of rice wine vinegar
1 tablespoon of olive oil
Water to thin
Method:
Preheat the oven to 400 F.
Chop sweet potatoes and cauliflower/broccoli.
Tear kale stems off kale leaves, massage in a bowl with a drizzle of olive oil.
Toss sweet potatoes, cauliflower/broccoli, and kale with seasonings.
Spread out everything but the kale on a baking sheet lined with parchment paper.
*If using chickpeas (drain & toss with olive oil and seasoning), lentils, or sliced and marinated tofu, you can add these to the pan too.
*If using meat protein, we recommend cooking separately.
Roast until the sweet potatoes are almost fork tender (about 15 minutes), then add the kale.
Roast until the kale is crispy & potatoes are fork tender (about 5-8 minutes more).
While roasting, shake all vinaigrette ingredients together in a jar, and add more or less or each ingredient to taste.
Add a serving to your bowl, drizzle with vinaigrette, top with optional ingredients like pumpkin seeds, cashews, or smoked almonds, and enjoy!
